Currently, I have a lot of basil in my garden.  So much, that today I made 3 pints of pesto and this really yummy dressing and I still have basil left over. In any case, ’tis the season for basil, I thought I would share this refreshing dressing recipe with you.

Ingredients:

juice of 2 lemons
juice of 2 oranges
1 cup of basil
1/2 cup – 3/4 cups of EV olive oil
1/4 cup of tamari (gluten free)
1-2 inches of ginger root, chunked
4-6 cloves of garlic, peeled
Himalayan salt to taste

Method:

Toss everything in the food processor.  Blend. Refrigerate.  Shake before using, as it will separate.  
Produces about a pint of dressing.

I put it on my roasted sweet potatoes this evening, but it’s really quite terrific over anything else.  Very refreshing and light. Enjoy and feel free to share how you used it!
