Ingredients:

6-8 beets
3 Tbs of raw apple cider vinegar
2 medium cloves garlic, minced or pressed
2 shallots, finely diced
4 Tbs extra virgin olive oil
Sea salt and black pepper to taste
1/2 cup of fresh parsley, chopped

Method:

Fill a pan with beets and cover with water. Bring to a boil and then simmer for 45 mins-1 hr. When the beets are soft and are easy to pierce with a fork, they are done. Cool the beets and the peel should come off easily. Cut the beets into bite size pieces and place in a bowl. Add the remaining ingredients and toss. Can be eaten immediately, but gets even better after it sits for a couple of hours and marinates.
